Slow Cooker Black Bean Chili Recipe

Now that the weather is getting cold, it’s time to pull out the slow cooker! I have a bunch of slow cooker recipes I love to make when it’s chilly out, so when Hamilton Beach offered to send me their Set ‘n Forget® 6 Qt. Programmable Slow Cooker I was super excited! Check out this delicious slow cooker black bean chili recipe!

Slow Cooker Black Bean Chili Recipe! No need to pre-soak the beans!

Slow cookers are the perfect way to make an easy, hands-off dinner for the whole family! It only takes a few minutes in the morning to throw everything into the slow cooker, and then you can just set it and forget it!

Slow Cooker Black Bean Chili Recipe

This chili is delicious and easy to make, and the best part is, you don’t have to soak the black beans beforehand because they soak in the slow cooker while the whole thing cooks!

And if you want, you can prep this ahead of time and freeze it! Freeze the beef, onion, and garlic in a freezer bag. Move the bag to the fridge the night before you plan to cook it. Then the next morning, empty the bag into the slow cooker, add the other ingredients, turn it on, and you’re ready to go!

Ingredients:

  • 1 pound of beef chuck, cut into 1/2″ cubes
  • 1 can of crushed tomatoes (about 15 oz)
  • 1 cup dried black beans
  • 1 yellow onion, chopped
  • 2 cloves of garlic, minced
  • 3 T chili powder
  • 2 C water
  • 2 t coarse salt
  • ½ t pepper
  • sour cream, for serving

Notes: You can substitute a red onion instead of the yellow onion if you want a little more “zing” and less “sweet”.

Rinse the black beans, then add them and all other ingredients (except for the sour cream) to a 5 or 6 qt. slow cooker. Cover and cook on high for 6 hours or on low for 8 hours. If you have the Set ‘n Forget® 6 Qt. Programmable Slow Cooker you can set it up using Program mode, and it will automatically turn itself to warm after the specified amount of cook time!

The other bonus about cooking with a slow cooker is that your house will smell amazing all day!

Once it is done cooking, spoon the chili into bowls. Serve with cheese and sour cream if you wish, and enjoy your family dinner!

I absolutely love my new slow cooker! It’s big enough to cook large meals, and the program mode is AWESOME! Slow cookers are great for stress-free cooking, and with program mode, if I have to run a quick errand right before dinner, I don’t have to worry that dinner will burn!
