Mix the iced coffee and heavy cream together in a bowl (make it however creamy you'd like!), then pour the mixture into your popsicle molds. Add sticks and put the molds in the freezer until frozen.
For two-toned popsicles:
Pour about an inch of heavy cream into each mold, then put the molds in the freezer for an hour. Once the cream has mostly solidified, pull the molds out of the freezer and fill with iced coffee. Then add the popsicle sticks and put the molds back in the freezer until frozen solid.
For iced coffee only popsicles:
Fill the popsicle molds with iced coffee, add popsicle sticks, and freeze until solid
When your popsicles are solid, pull the molds out of the freezer and run water over the outside to help loosen the popsicles. They should slide right out of the molds after a few seconds.
Dust the popsicles with a bit of cocoa powder for some extra chocolate if you'd like!
