Cool Whip Cookies

This is an easy cookie to make for the holidays or any time of year. You can use ANY packaged cake mix.

Cool Whip Cookies are a quick and easy cookie to make any time of year! You can use any boxed cake mix too.

Cool Whip Cookies

Ingredients:

  • 1 8 ounce container cool whip, use the whole tub
  • 1 egg
  • 1 16.25 box Lemon Supreme Cake mix*
  • 6 Tbsp flour
  • ⅓ cup powdered sugar
I added the extra flour because this is an old recipe. The size of cakemixes has been decreased and I wanted to keep this as close as I could to the original recipe

Directions:

  1. Preheat oven to 350 degrees
  2. Line cookie sheet with parchment paper or lightly grease cookie sheet.
  3. Beat the cool whip and the egg together. Add the cake mix and flour and mix until thoroughly combined.
  4. Place the bowl in the refrigerator for an hour.
  5. Add the confectioners sugar to a large plate.
  6. Drop by teaspoonfuls into the confectioners’ sugar and roll to coat. The dough before rolling will be sticky.
  7. Place on prepared cookie sheet and bake for 10 to 12 minutes. The bottoms should be golden brown.
  8. Do not keep in the oven because you think these are not done – they are! They will harden up as they sit on the sheets. Usually takes about 3- 5 minutes.
Another idea is to use white cake mix with 3 egg whites and then add food coloring to the batter. (red and green for Christmas…red or pink for Valentine’s day…pastels for Easter) You can make ahead and freeze them too. (freeze no longer than 2 months. Let thaw in fridge for 24 hours)
