There’s nothing better than an ice-cold popsicle on a hot summer day! (Remember these popsicles, these popsicles, and all of these popsicles?!) When my husband had a hankering for iced coffee, I knew it was the perfect opportunity to make iced coffee popsicles!
Cookies & Cream Iced Coffee Popsicles
These iced coffee popsicles are ridiculously easy to make! I used International Delight iced coffee because it’s delicious and already mixed up in a bunch of fun flavors, but you can use whatever coffee you want.
- 3-4 cups of iced coffee
- heavy cream (optional)
- cocoa powder (optional)
You can make these popsicles three different ways!
For creamy fudgesicle style popsicles:
Mix the iced coffee and heavy cream together (make it however creamy you’d like!), then pour the mixture into your popsicle molds. Add sticks and put the molds in the freezer until frozen.
For two-toned popsicles:
Keep the iced coffee and cream separate to make a two-toned popsicle! Pour in about an inch of heavy cream, then put the molds in the freezer for an hour. Once the cream has mostly solidified, pull the molds out of the freezer and fill with iced coffee. Then add the popsicle sticks and put the molds back in the freezer until frozen solid.
For iced coffee only popsicles:
If you don’t want any extra cream, just fill the popsicle molds with iced coffee, add popsicle sticks, and freeze until solid.
When your popsicles are solid, pull the molds out of the freezer and run water over the outside to help loosen the popsicles. They should slide right out of the molds after a few seconds.
Dust the popsicles with a bit of cocoa powder for some extra chocolate if you’d like!
